quinoa pilaf

As I have mentioned before, I don’t cook. Usually. We eat a la carte typically. We eat lots of grains and beans at our place. And veggies. I hate fruit, but the rest of my family loves it. Sometimes I do make stuff, though. Not that what I make would be recognized by the general population. Today, I spent all afternoon in the kitchen while the boys alternated between helping me, and lounging by the fire downstairs with Daddy. And while the girl alternated between sleeping and watching me cook while she chilled in her bouncy seat (Call Social Services! I put her bouncy seat on the island countertop.) or sling.

On today’s menu was wild rice soup (I made sure to make extra because my favorite soup loving friend is visiting tomorrow) and quinoa pilaf. Quinoa (say, “keen-wah”) is one of our favorite grains. And it’s so easy!

Just cook up some quinoa…saute the dry grains in the saucespan with a splash of olive oil for 3 minutes, then, cook: one part quinoa to two parts water or stock. I used chicken stock and added some spices and red peppers. Add whatever you like.

Bring to a rolling boil, then cover and simmer for 15 minutes, or until the grains are soft.

No need to drain…the quinoa will soak up all the stock. Chill the cooked quinoa. Meanwhile, gather the goodies you’d like to add to your pilaf. Like chopped pecans.

Today, I also used garbanzo beans and raisins (I’m pretty sure pilaf just means, “add whatever you want to your concoction”…my kinda meal!).

Chopped green onions. I LOVE onions.

Mix up your add-ins…then add the quinoa.

Mix it up (yes, I am well aware that this looks like gruel to some of you…I grew up eating like this and so my own family now suffers the same fate enjoys healthy eating of this variety.)

Dish the pilaf.

Serve and enjoy! (No photos of me eating it…I did have a very “healthy” portion, however! Prince Charming, he just had wild rice soup.)

The boys love it. MckNugget says,
