Gluten-free and yummy, too!

Okay, I had never (knowingly) made a gluten-free meal before. Mostly, that’s because I didn’t know what gluten-free was. Truly. Is that terrible? But I know that for health reasons, a lot of people can’t (or don’t want to) have gluten in their diets.

So I was challenged to share a gluten-free recipe that is so yummy, you’d never know it was missing anything.

Enter, Sweet Potato Chili.

After fiddling with it this way, then that, I have arrived at the perfect mixture of gluten-free yumminess sure to tickle your tastebuds. Here it is.

You’ll need:

1 peeled sweet potato, hunked up into cubes
2 chopped green peppers
4 chopped cloves of garlic
1 chopped onion
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1 teaspoon sea salt
1/2 teaspoon pepper
2 teaspoons carob powder
2 cans of Ro-Tel (or diced tomatoes)
1 can of black beans (don’t include the water)
1 can of pinto beans (again, no water)
2 cups of chicken stock from the rooster you killed (or just use vegetable broth)

To make:

In some coconut oil or grapeseed oil, cook the vegetables in a pan. When the onions are sauteed, put all of these veggies plus the rest of the ingredients into your crock pot. Cook on low or medium for a few hours, until the sweet potatoes are soft. Serve with goat cheese or another garnish on top!
