This potato soup I made yesterday is for people who sometimes like to cheat a little when they cook. Or a lot. Like me. This soup was so good, that I had to share my recipe for Cheater’s Potato Soup. It’s hardly a homemade meal, and it’s definitely not considered healthy. But man was it good. The remainder of the soup from yesterday will go to work with MckDaddy tomorrow. I hope he likes it as much as I did!
Combine in a saucepan over low heat:
1 can cream of mushroom soup
1 can (the empty soup can) of heavy whipping cream
1 large boiled baking potato, cubed
sea salt to taste
Heat until warm. Eat.

I made potato soup today for the first time ever… I HATE to cook and this was soooo easy and soooo good.
POTATO SOUP: PEEL 5 OR 6 LARGE POTATOS AND CHOP UP ONE LARGE ONION AND COOK THIS TOGETHER WITH JUST ENOUGH WATER TO COVER. DON’T OVERCOOK! DON’T DRAIN THE WATER OUT. ADD 1 AND 1/2 CUPS OF MILK, 1/2 STICK OF BUTTER, 1 CAN CR. OF CHICKEN SOUP AND 1 CAN OF CREAM OF CELERY SOUP AND 1 8 OZ PACK OF CREAM CHEESE. ADD SALT AND PEPPER TO TASTE AND GARLIC SALT IF DESIRED. MIX WELL AND SIMMER UNTIL CHEESE IS MELTED ABOUT 20 MINS, STIRRING TO KEEP FROM STICKING. THIS IS GREAT WITH CORN BREAD.
Did this make enough to feel all the family? I only have two little onees by we are making this TONIGHT!
I’d make a double batch for sure, then!
here is my favorite potato recipe – I just bake the potatos a day or 2 before (usually while I am baking some for dinner), then put in fridge until I make it –
Loaded Baked Potato Soup
2/3 cup butter or margarine
2/3 cup flour
7 cups milk (many times I use powder milk for some or all of this)
4 large baking potatoes, baked, cooled, peeled and cubed (about 4 cups)
4 green onions, sliced (or regular onions about 1/2 cup chopped)
12 bacon strips, cooked and crumbled
1 1/4 cup shredded cheddar cheese
1 cup (8 oz) sour cream
3/4 tsp. salt
1/2 tsp. Pepper
In a large soup kettle, melt the butter (and cook onions if using regular). Stir in flour; heat and stir until smooth. Gradually add milk, stirring constantly until thickened. Add potatoes and green onions, if using. Bring to a boil; stirring constantly. Reduce heat and simmer for 10 minutes. Add remaining ingredients; stir until cheese is melted. Put in crock-pot to keep hot.
This is sooooooooo good.
Looks yummy will have to try it and a few other ones below. Thank you everyone.
I love it! I’m all about easy and fun for the holidays, and soups like this make life easy! We’re hosting a party today, and I’ve decided I’m serving Peppermint Bark (and coconut bark) because it’s so easy it feels like cheating. Do you make holiday bark? http://livewithflair.blogspot.com/2011/12/easy-does-it-how-to-survive-holidays.html
I make a really easy potatoe soup, not reall healthy but super yummy.
I use about 6 potatoes, I peel and dice them, but it would be good either way. I fill the pot with water about 3\4 with potatoes in the pot. Then boil, with salt and pepper to taste. I don’t drain the pototoes.I then add a stick of butter and a can of Nestle Table Cream ( blue lable with a strawberry on it) and stir and your done. My family likes todress it up with by adding shredded chedder and bacon, but I like it naked.
I am praying for you! You have burned so many people and lied to so many people, there are so many people who are hurt and feel so hurt by your actions, more than words. Why can’t and don’t you just own up to what you have done???? Isn’t that the ” christian ” thing to do… at the end of the day, the only person you really have to answer to is God, BUT that doesn’t mean that you can go around being hateful and hurting others. I don’t believe that is the christian way, although I could be wrong! I hope you sincerely think about apologizing not only to your family, but to the people who have supported you through and through!
Ashley I’m sorry you feel this way. If you want, you can privately email me about your concerns so we can discuss them. If you’d rather, please feel free to let me know in another comment what exactly you mean by “burning and lying to people” and I’d be happy to listen and share, if you wanted.
Here is another potato recipe… Make mashed potatoes, a large quantity. You will need 2 layers of it for a 9×11 dish .
then prepare a meat sauce (like sloppy Joe, or spaghetti meat sauce) any way you like, or a vegetable or chicken sauce, or even use one of your mushroom can soup thingy. Now you assemble the dish.
On the bottom of the dish, put a layer of your mashed potato, add shredded cheese, add the meat sauce, or any other sauce you like, add cheese, put the rest of the mashed potato and finish with grated cheese on top. Put in the oven for a few minutes so the cheese will melt and the dish gets warm throughout. Serve with salad.
This dish is called Madalena in Brazil.. it’s usually made with left over mashed potato. Can you guess how much mash potatoes we eat??? hahahha
Thanks Tereza!!!!
So going to try this! Thanks!
Sounds delicious!
Amy
Looks good. As I am the only one that eats it, I will have to try it sometime.
Cheating or not, looks and sounds delish. Easy to make, score.
And you didn’t peel the potatoes, right? Another shortcut. Looks good.
We do a dish that is layers of sliced potato and thin onion, repeating over & over, in a casserole dish — smothered in heavy whipping cream (just isn’t the same with anything lighter). Bake @ 375 for about 60 minutes uncovered. AMAZING!!!
Sounds yummy and easy! Just my style. Thannks!!
My grandma used to make this too but with lots of real butter too. She cooked lower and longer (325 for 2 hours). I can still hear saying “the slower you cook it, the better it tastes”!!
I know you love your crock pot as much as I love mine… potato soup is super easy in the crock pot.
6 large potatoes, peeled and cubed
1 large onion, diced
1 quart chicken broth
3 garlic cloves, minced
1/4 cup butter
Salt to taste
Pepper to taste
Cook on low for 6-8 hours or until potatoes are tender. Then mash in the ingredients below to make it nice and thick.
1 cup cream or 1 cup 1/2 and 1/2 cream
1 cup shredded sharp cheddar cheese
Garnish: chives, sour cream, bacon, and cheese
Totally going to make this!!! I am trying all things potato. Thanks!!!
I made something like this today…. 6 potatoes, 1 onion, 2 cans chicken broth some pepper…8 hours on low in crock. Mash the potatoes a bit. Stir in a bag of shredded cheddar cheese and 1 cup half and half. 1 more hour on low. Threw a can of bisquits in the oven for the last 14 minutes to eat along side the soup. De-lish. Easy peezy and oh so yummy!
