Saturday Sour Cream and Spinach Pancakes

1 batch pancake batter

1 1/2 cups fresh spinach

1/2 cup sour cream

3 eggs

1/3 cup honey

1 T flaxseed meal (optional)

Yes, I made this recipe up. Yes, it’s delicious and nutritious!

Prepare a batch of pancake batter. Set aside.

Blend the spinach in a blender or food processor until completely chopped. It will make about 1/2 cup. Set aside.

Stir in sour cream to the batter. Combine well with a fork until smooth. Add honey and eggs. Add the chopped spinach and the flaxseed meal to the batter and stir.

Make into pancakes as normal.

    pear halves, dollop of mayonnaise, and grated cheddar cheese on top

    My mouth is watering just typing it. My mee-maw made this for me growing up and it has become a family favorite.

    Made these this morning and they were fantastic! I must admit that I was in a hurry and read my own handwriting incorrectly. I added 1.5 c of sour cream (.5c reg, .5c lite &.5c plain yogurt), so mine were more like crepes, but good regardless. Even my doubting husband went back for more. Thanks for posting!

    LOVE the recipie ideas! Keep them coming! I like to mix in a little Laughing Cow cheese (the soft stuff), with chopped spinach and spread it on a piece of toast. I did this for my son to get him to eat spinach and now we both love it!

    Thanks SO Much! I see you actually have recipe ideas…duh, never noticed :) I want you to know you have encouraged me to experiment more. I love couscous and now so do my little grandkids that live with me :) I made them couscous with cinnamon, dried cranberries, walnuts, a little splenda, and a few tablespoons of half and half and they thought they were having a desert! Yummmmy! But then they think everything I make is Great! Cooked apples to them is desert as well because I serve it last :) Anyway hope all stays quiet for you, always in our prayers :)

    Great recipe! I "hide" pureed spinach in almost EVERYTHING! I'm a very picky eater (and it looks like my younger son will be as well), so stuffing foods I like with pureed spinach, carrots, sweet potatoes, etc. is almost the only way I get my veggies!

    I haven't tried it with pancakes… yet, but definitely will next weekend!

    I'm constantly coming up with "new" pancake recipes. (Basically I just throw whatever sounds healthy and yummy into them. :) ) The current fave at our house is beet and blueberry pancakes. Pureed beets, unsweetened applesauce, a little vanilla, cinnamon, a couple of eggs and some pancake batter make for good (pink!) eats! No syrup required. :)
